The Saladin at Somerford pub reopens tomorrow at 6pm after six months of redevelopment.

The former Australian themed pub had been transformed into a traditional English village pub serving lunchtime and evening meals.

Owner Sue Robson, who runs the business with her husband David, decided to revamp the pub after two years, to give it a more British style.

"It had an Australian theme and all the character had been taken away. Now it has smaller eating areas and cosy corners. There is also a room for conferences and private eating," she said.

Three new chefs have been hired to cook traditional British dishes, many made from local produce.

Award-winning chef Peter Brewer is joined by Dutch sous chef Boris van Meeuwen, who will be starting his first job in the UK, and commis chef Jamie Leadbetter.

Mrs Robson, 44, is being joined front of house by Bournemouth University graduate Geraldine Betts.
