Ricki Weston, the new executive chef at Whatley Manor, has revealed his latest menus – including a 12-course experience priced at £540 for two, including paired wines.
There is a less extravagant menu available, on which mains will start at £24, at the Malmesbury hotel’s Grey’s Brasserie.
The hotel recently reopened after a short closure on Friday, February 4, to launch the changes.
Sue Williams, general manager of Whatley Manor, said: “What particularly excites me about Ricki’s dishes is that they demonstrate the very best of British heritage.
"He focuses on achieving a well-balanced dining experience with brilliant depth of flavour, and all this by using 98 per cent of ingredients from the British Isles.
“He is also collaborating with our new head gardener to further reduce our carbon footprint by increasing the produce grown on-site in the hotel’s gardens.”
A hotel spokesman said: “The Dining Room’s menu format includes a dozen dishes at £175 per person, with a vegetarian alternative. The focus of Ricki’s food is largely British, with a huge emphasis on local Wiltshire produce and suppliers, where possible. Optional wine pairings are available from £95 per person.
“Sample dishes include: Potato with trufflyn goats cheese and onion; caviar with chicken and parsnip, lamb with salted lettuce; cockles, cucumber, shallot and trout roe; turbot with celeriac, chicken wing; aged duck, carrot, date and berry sauce and plum, custard and apple blossom pudding.”
In Grey’s Brasserie, the more informal restaurant, Ricki and his team have devised a modern British à la carte menu. Starters range from £11-£13, main courses from £24-£30, and desserts are £11.
Typical dishes include: mackerel, sesame seed mayonnaise, fresh herbs; creamed mussels, white wine sauce, celery and crispy shallots; venison, roasted celeriac, red currant and sprouting broccoli; poached rhubarb, gingerbread ice cream and goat’s milk; and banana and caramelised chocolate tart, yoghurt and beurre noisette.
